Kendra Gaffney was sprouted in the dirty south of Baton Rouge, Louisiana and raised in the small town of Makanda, Illinois where she attended college at Southern Illinois University at Carbondale. After graduating with a B.S. in Food and Nutrition, specializing in Dietetics, Kendra went on to complete her graduate program/Dietetic Internship at Vanderbilt University Medical Center in Nashville Tennessee. Following her graduation, she moved to the Emerald Coast of Florida.

After working as a clinical dietitian for 8 years in the Panhandle of Florida, in 2010 Kendra traveled the entire lower 48 searching for a place to open her dream business, a small group practice called Nutritious Thoughts LLC. The sights, sounds, and spirit of Asheville pulled her to the Valley of the Blue Ridge Mountains. Kendra is now living her dream as the Founder of Nutritious Thoughts, LLC. In addition, she is a Certified Eating Disorder Registered Dietitian (CEDRD) and Approved Supervisor through the International Association of Eating Disorder Professionals (iaedp). This certification was established to promote standards of excellence within the field of eating disorders. Kendra also enjoys serving her local community as an Advisory Board Member and Support Group Supervisor for the local non-profit organization, T.H.E. Center for Disordered Eating.

Katie Rhodes, RD, LDN

Katie Rhodes was born and raised in Tuscaloosa, Alabama. She has taken the unconventional route with her education, beginning at Belmont University in Nashville, Tennessee where she graduated with a Major in Health and Minor in Education. Yearning for a change of scenery, Katie packed her bags for Bozeman, Montana where she fully embraced all the West had to offer her. While always having a strong interest in nutrition, it was the essence of Bozeman that influenced her to return to school to pursue a career in Dietetics.

After graduating with a B.S. in Food and Nutrition from Montana State University, Katie completed her Dietetic Internship at Lenoir-Rhyne University in Asheville, North Carolina. It was during her internship that Katie developed a calling and passion towards nutrition counseling and the specialty of eating disorders. Katie has since been pursuing her passion at Nutritious Thoughts, LLC and now holds the title of Clinical Coordinator. She is currently working towards her eating disorder certification (CEDRD) through the International Association of Eating Disorder Professionals (iaedp) and serving her local non-profit, T.H.E. Center for Disordered Eating, as a vital board member. Katie truly looks forward to making a positive difference in the lives of those who walk through the doors of Nutritious Thoughts, LLC.

Lindsey Yemc, MS, RD, LDN

Lindsey Yemc originated from the rolling Pennsylvania hills in a small town called Greensburg. Transplanted into the South, she spent her adolescent years in Burlington, North Carolina and attended college at The University of North Carolina at Greensboro. After graduating with a B.S. in Human Nutrition and Dietetics with a minor in Psychology, she set her sights on expanding her education and received her Master of Science in Nutrition from Appalachian State University two years later. Lindsey’s passions in providing holistic nutrition counseling and promoting body acceptance were ignited during her graduate career, and she couldn’t be more excited about having the opportunity to pursue these passions with Nutritious Thoughts, LLC. Lindsey is actively pursuing her eating disorder certification (CEDRD) through the International Association of Eating Disorder Professionals (iaedp).  You can also find Lindsey leading groups at the local non-profit organization, T.H.E. Center for Disordered Eating.  She looks forward to assisting her clients in their individual journeys in developing a positive relationship with food and achieving balanced nutrition and improved well-being.

Margaret Ruch, MS, RD, LDN

Margaret Ruch is one of the fortunate few who was born and raised in Asheville, North Carolina. After high school, Margaret set out East for Raleigh, N.C. to attend North Carolina State University, where she interned with the Sports Dietitian for NCSU Athletics and worked for University Recreation. After earning a B.S. in Nutrition Science with a Minor in Sports Science, Margaret continued her education and earned a Master of Science degree in Nutrition from Meredith College. Following graduation, Margaret interned at the UNC Center of Excellence for Eating Disorders (CEED) before moving back home to the Mountains to complete her Dietetic Internship.

Margaret has always had a passion for baking and cooking, she enjoys experimenting with different foods and testing out recipes on her family. She combines her interest in sports and movement with the science of nutrition by teaching about proper fueling techniques for optimal athletic performance as well as assisting others in creating a positive relationship with food, body, and movement.

Margaret is in the process of becoming a Certified Eating Disorder Registered Dietitian (CEDRD) and currently serves as a group facilitator for T.H.E. Center for Disordered Eating, a local non-profit. Margaret combines her love of food, movement, health, and interacting with others while at Nutritious Thoughts, LLC.

Catherine Beck, MS, RD, LDN

Catherine Beck was born and raised just outside of Atlanta, Georgia. After graduating from the University of Georgia with a B.S. in Food and Nutrition and a Master of Science in Exercise Physiology, she uprooted and moved to Asheville to complete her dietetic internship and become a Registered Dietitian. It was during this time that she developed a passion for nutrition counseling in the treatment of eating disorders. She also gained valuable experience working with collegiate athletes and various athletic populations. The people, spirit, and beauty of Asheville encouraged Catherine to establish permanent roots in Western NC and get involved with local practitioners and the community.

Catherine enjoys forming authentic relationships with her clients and looks forward to helping facilitate positive change in those that she has the opportunity to meet and interact with. She specializes in the areas of disordered eating, eating disorders, substance abuse, and sports nutrition. Catherine is currently working towards her certified eating disorder dietitian certification (CEDRD) and serves as a group facilitator for T.H.E. Center for Disordered Eating. Catherine is eager to be a part of the wonderful and inspiring group of women at Nutritious Thoughts, LLC., and excited to work with individuals to create a sustainable, nourishing, and enjoyable relationship with food.

Rhea Wheeler

Rhea Wheeler was born and raised in Detroit, Michigan, and has spent a good part of her life getting to know this world. Rhea loves to travel! She moved to South Korea and spent three years teaching English at a Korean school. During this time, she was able to travel to Borneo, China, Japan, Indonesia, Philippines, and Thailand. When she got back from Korea, she married her Canadian husband. They moved around to places including Canada, Michigan and then North Carolina. They first settled in Clayton, NC (which is a suburb of Raleigh), and then migrated to the Blue Ridge Mountains in Brevard, NC.
